eggs in bed

Weekend breakfasts. Gotta love 'em!

Sometimes weekends get pretty full though and you may not have time to make flap jacks from scratch, or full English, or whatever type of special weekend breakfast is special to you.

When I'm having one of those days (the it's-the-weekend-so-I-want-something-more-than-cereal-but-I-have-like-10-minutes-to-make-it-happen type of day) a version of scrambled eggs is usually what I end up with. The eggs keep me full for the morning and the flavours are so customisable. It's the best breakfast to suit every mood.

This weekend was a particularly delicious version packed full of feta and herbs.

Eggs In Bed

Ingredients (makes 2 servings)

1 medium sized brown or yellow onion
1 clove of garlic
a handful of cherry/grape tomatoes
4 eggs
A generous glug of milk
1 disc of herbed feta
1 hamburger bun
Cream Cheese or smooth cottage cheese (I used roasted garlic smooth cottage cheese)
Dried herbs of your choice

Method

  • Chop and fry the onion and garlic
  • Then add the chopped tomatoes to the frying pan and fry til soft
  • Meanwhile whisk the eggs, milk and dried herbs together in a bowl (I used thyme, basil and origanum)
  • Add the whisked mixture to the frying pan and scramble those eggs
  • Halve the hamburger bun and toast
  • Chop the feta.
  • When the eggs are almost ready throw the feta in the frying pan.
  • Smear the cream or cottage cheese onto your toasted bun and then top with the eggs.
  • Eat
